DIRECTIONS

• Heat the oil in a large soup pot over medium-high heat.

• Add the Chinese five-spice powder and cook, stirring constantly, for 1 minute.

• Add the chicken legs and brown on both sides, about 3 minutes per side.

• Add the onion, garlic, ginger, lemongrass, lemon juice, soy sauce, fish sauce, honey, chili sauce, pepper, and 2½ quarts of water.

• Cover and bring to a boil, then reduce to a simmer. Allow to simmer for 10 to 12 minutes, or until the chicken is cooked through.

• Once the chicken is fully cooked, fish it out using tongs and run under cold water to cool it down.

• Slide the skin off the chicken pieces, and use a fork or your fingers to remove the tender meat from the bones, reserving the bones, skin, and gristle.

• Return the bones, skin, and gristle to the pot, cover, and simmer for another 45 minutes.

• Strain the broth and return to its pot. Discard the solids.

• Taste for seasoning and adjust as necessary.

• Cook the rice vermicelli according to package directions. Drain and rinse. Set aside.

• To serve, divide the noodles between bowls and use a ladle to portion broth over the noodles.

• Divide the chicken pieces between the bowls, top with any of the optional garnishes, and serve immediately.
